ニラは餃子などの中華料理で欠かせない野菜のひとつですが、使い切れずに余ってしまう……なんてこともあるのでは？　今回は、余ったニラで手軽につくれる副菜レシピをご紹介します。

 

## ニラじゃこチーズの卵焼き

##### 材料（つくりやすい分量）

ニラ…50g  
ちりめんじゃこ…40g  
卵…2個  
とろけるチーズ…20g  
サラダ油…大さじ1

 

##### つくりかた

❶ニラを細かく切り、じゃことともにボウルに入れます。卵も加えて混ぜ合わせ、油をひいたフライパンで両面を焼きます。  
❷①に火が通ったら、とろけるチーズをのせてフタをし、チーズが溶けたらできあがりです。じゃことチーズの塩味で味つけいらず！

 

## ニラとひじきの常備菜

##### 材料（つくりやすい分量）

ニラ…40g  
ひじき…30g  
乾燥キクラゲ…5個  
しいたけ…5個  
油揚げ…1枚  
めんつゆ…150cc

 

##### つくりかた

❶ひじきとキクラゲを水で戻します。ニラとしいたけ、油揚げ、水で戻したキクラゲを細かく切ります。  
❷フライパンで油揚げを炒め、そこへ①を入れてめんつゆで煮ます。

 

## ニラとえのきの酢のもの

##### 材料（つくりやすい分量）

ニラ…30g  
えのき茸…100g  
すりおろししょうが…大さじ1  
ポン酢醤油…適量

 

##### つくりかた

❶ニラは3cmくらいに切り、えのき茸も石づきを取って食べやすい大きさに切ります。  
❷鍋に湯を沸かして①をサッと茹で、冷めたら軽くしぼります。  
❸②を器に盛り、ポン酢醤油をかけ、お好みでしょうがを添えます

 

## ニラと納豆の甘辛炒め

##### 材料（つくりやすい分量）

ニラ…50g  
牛豚合いびき肉…100g  
納豆…40g  
砂糖…大さじ2  
醤油…大さじ2

 

##### つくりかた

❶フライパンに合いびき肉を入れて炒めます。  
❷火が通ってきたらみじん切りにしたニラを加え、なじんできたらさらに納豆を加え、砂糖・醤油で味つけして煮つめます。ほどよく水分が飛んだらできあがり。
